At the Medway Food Innovation Centre at NRI, we are looking for a motivated MSc student in Food Engineering/Processing who is currently a student at the University of Greenwich and willing to register for the academic year 24/25, or in closely related areas including food chemistry, to work in an ongoing project. This is an outgoing project consisting of the extraction of proteins from upcycling brewery wastes (BSG) and the manufacture of meat analogues. This 4-month project will focus on the extraction of proteins via wet extraction, including enzyme extraction.
Main responsibilities:
- Support the completion of an ongoing project using eco-innovative methods to extraction BSG protein and modelling these processes for pilot and industrial scales.
- Determine the most viable extraction methodology and potentially support the sensory analysis of the meat analogues produced.
- Support literature review, experimental design, data analysis and writing up of results.
- Balance the competing pressures of research and administrative demands and deadlines.
- Any other duties as may reasonably be required, consistent with the grade of the post.
- The student is expected to work for 20 hours a week until the end of project. Work will be carried out flexibly and around the student’s term timetable.
